The release must be a blend,\n2. The blend must utilize oak aged beer, and\n3. The oak aged beer must be older than a year.\n\nOur 2025 edition features a blend of spontaneous wild ales conditioned on Gamay grapes and purple plums. Prior to bottling the cider was fined with the addition of highly tannic perry, an ancient technique developed in the Mostviertal, Austria.\nSweet blossom, apple pie and icing sugar aromas move onto quite concentrated flavours of honey, peach, dried apple, vanilla and fruit cake spice.
